Broccoli Mash

20130425-133946.jpgCutting carbs made easier! I concocted this easy broc-mash that helps ease the desire to stuff my face with potatoes to accompany my meats. Most broc-mash recipes calls for potato but this is sans carbs so it may take some getting use to since it’s not as creamy. Hope you enjoy!

Ingredients:

2 crowns of broccoli chopped

4-5 cloves of garlic minced

Half an onion chopped

1 cup of mushrooms sliced

Butter, salt, pepper, grated parmesan cheese, to your liking

Directions:

Boil or steam broccoli until tender (about 7-8 minutes)

Sautee onions, garlic, mushroom in butter and lightly season with salt and pepper

Drain broccoli and place in a blender (or use electric hand mixer), add sauteed veggies and some parmesan cheese

Blend until mashed

Plate and sprinkle with more cheese for a lovely effect!
