A Puff of Lemon

Who would have thought that making cream puffs would be so easy? They look so delicate…so decadent…so French! And yet, they can be made in under an hour. Found this recipe on Allrecipes.com and tweaked it a bit to taste. Enjoy!

Lemon Filling (make this first):
-Combine 1 beaten egg,  1/3 cup of sugar, 3 tbsp lemon juice and 2 tbsp of unsalted butter in a sauceman. Bring to boil over medium heat and stir frequently for 5 minutes or until mixture becomes an opaque yellow, thick consistency.
-Shock chill by putting pan into a bowl of ice water and continue stirring for 2 minutes.
-Place in a covered bowl and chill for 30min-1hr
-In a separate bowl beat 1 cup of heavy whipping cream and 2 tsp of sugar until soft peaks form
-Fold whipped cream into lemon mixture for a refreshing cream filling!

Pastry Puff:
-Preheat oven to 400*
-Boil 1/2 cup water and 1/4 cup unsalted butter in a saucepan
-Dump in 1/2 cup of flour and mix until a smooth lump of dough forms
-Remove from heat and let stand 5 minutes
-Fold in 2 eggs, one at a time
-Add 1 tsp of vanilla flavoring
-Grease baking sheet and scoop a 1-2 tsp size dough ball (separated by a few inches), bake 30 minutes
-Immediately place on cooling racks and cut puffs in half to remove inner soft dough
-Fill puffs with filling and whatever fresh fruit you desire
-Finish with powdered sugar!
