In an effort to move away from red meat, I’ve been trying to spice up our chicken dinner options. Enter, chicken soft tacos. I don’t know about you, but the thought of Del Tacos chicken soft tacos with their special white sauce makes my mouth water. So after looking online forsome recipes, I found a great imitator! Enjoy your fiesta!
2 medium tomatoes
half an onion
handful of cilantro
half jalepano pepper, seeded
handful of diced sweet bell peppers
2 tsp of lemon juice
1/4 tsp of garlic salt
pepper to taste
*Combine all ingredients into a food processor and grind for ~30 seconds. Chips for dipping!
Taco White Sauce:
1/4 cup lite mayo
1/4 cup lite sour cream
1 tsp lemon juice
Dash of garlic salt
*Mix all ingredients together and chill
Chicken Soft Tacos:
1 lb. chicken breast cubed
1/8 cup of red wine
half tomato diced
half onion chopped
1 tbsp lime juice
1 tsp brown sugar
dash of herbs: oregano, basil, salt, pepper, garlic
cabbage head (I used a bag of sole slaw mix instead and used the remainder to make cole slaw the following day)
Shredded cheese (I used mexican blend and tossed it with taco seasoning for an extra kick)
1. Saute chicken until done ~20-25 minutes
2. Add wine, lime juice, sugar, onions, and herbs. Simmer for 8-10 minutes.
3. Meanwhile, heat an iron cast pan (the hotter the better!) and heat tortillas on both sides until slightly crispy ~20 sec each side
4. Add chicken, cabbage, cheese, tomatoes, and top with white sauce!
