Fiesta Fiesta!

My sister came to visit over MLK weekend and since she holds a firm stance on no red meat (weird, I know) , I decided to cook up  a Mexican feast, composed of only chicken meat!! Mexi-night is one of Brian’s favorite dinner themes so of course he was delighted at the idea, as well. However, since Brian is a firm believer of red meat, I was apprehensive about telling him the catch. Luckily, the night was great and Brian even had thirds! Margarita cheers! Aiyaiyaiyayai!!!!

Chicken Enchilada con Salsa Verde
This recipe is actually inspired by Amanda. However, since I couldn’t remember how she put it together or the exact ingredients, I kind of winged it myself:

Ingredients:
Flour tortilla (small ones)
Canned or jarred salsa verde
Mexican mix  shredded cheese
1.5 lb chicken breast
Poultry seasoning spice
Fried onions (yes, the ones from Thanksgiving green beans)

Directions:
1. Preheat oven to 350*
2. Boil chicken until cooked throughout. Drain and dry. Pull breast until you get a shredded effect. Sprinkle with poultry seasoning.
3. With a frying pan on medium to high heat, lightly moisten both sides of tortilla with water and fry for 10-15 sec on each side.
4. Roll cheese and chicken in each tortilla and line face down on a casserole dish.
5. Sprinkle top with cheese, pour salsa verde all over, top with fried onions
5. Bake for 20 minutes

Chicken Soft Tacos

Ingredients:
Flour tortilla
1.5 lb chicken breast
1/2 onion chopped
2 cloves of garlic minced
Toppings as desired: sour cream, guacamole, tomatoes, olives, mexican rice, beans (I use jalapeno beans!), etc.

Directions:
1. Sautee chicken with onions, poultry spice, and garlic. Slice diagonally to make strips.
2. Line tortillas on a cooking sheet and bake at 350* for 3-4 minutes
3. Put together and top with ingredients as desired! (I lined them all with beans, rice, and chicken so that everyone could add whatever else they wanted afterwards).

Note that this recipe does not call for any butter or oil (I just used light Olive Oil Pam to coat the frying pan for the chicken). Very healthy! Until you start adding all the toppings…hahahah…enjoy!
